Gluten-Free Apricot Almond Polenta Cake

A golden skillet-style cake built on almond flour and medium-grind polenta, crowned with jammy fresh apricots. It stays impossibly moist for days and happens to contain no wheat at all.

Steps

  1. Heat the oven to 350F (175C), grease a 9-inch (23 cm) round cake pan, line the base with parchment and dust lightly with almond flour.
  2. Whisk the almond flour, polenta, sugar, baking powder and salt in a large bowl until evenly combined.
  3. In a second bowl whisk the eggs, olive oil, milk, vanilla and lemon zest until smooth and slightly pale.
  4. Pour the wet mixture into the dry ingredients and fold just until no dry streaks remain; the batter will look loose and grainy.
  5. Scrape the batter into the prepared pan and arrange the apricot halves cut-side up in a tight ring over the top.
  6. Brush the apricots generously with the warmed apricot jam.
  7. Bake 42 to 48 minutes, until the centre springs back and a skewer comes out with a few moist crumbs attached.
  8. Cool in the pan for 15 minutes, then turn out onto a rack and cool completely before slicing.
